These crispy Air Fryer Avocado Tacos combine perfectly golden breaded avocado slices with a zesty cilantro-lime slaw, all nestled in warm corn tortillas. A delicious and healthier alternative to traditional fried tacos, this recipe is quick to prepare and uses an air fryer to achieve that perfect crunch without excess oil.

Ingredients

Scale

Avocado Fries

  • 2 large firm-ripe avocados
  • 1/4 cup flour
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 1 1/4 cups panko breadcrumbs
  • avocado oil spray (for air fryer basket and avocado)

Taco Assembly

  • 68 corn tortillas
  • preferred taco toppings (such as sliced red onion, taco sauce)

Cilantro-Lime Slaw

  • 2 cups coleslaw mix
  • 1/2 cup chopped cilantro
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1 teaspoon kosher salt

Instructions

  1. Slice Avocados: Cut the avocados into 1/2 inch thick wedges to prepare for breading.
  2. Prepare Breading Stations: Pour the flour and 1 teaspoon kosher salt into a shallow dish. In a second shallow dish, beat the two eggs with a fork until well combined. Place the panko breadcrumbs in a third shallow dish.
  3. Bread the Avocado Wedges: Dredge each avocado wedge first in the flour mixture, then dip into the beaten eggs, and finally coat thoroughly with panko breadcrumbs.
  4. Prepare Air Fryer Basket: Lightly spray the air fryer basket with avocado oil spray to prevent sticking. Arrange the breaded avocado wedges in the basket, ensuring there is space between each wedge. Depending on your air fryer size, you may need to cook in batches.
  5. Spray and Air Fry: Lightly spray the breaded avocado wedges with avocado oil spray to help them crisp up. Cook in the air fryer at 400°F for 7-8 minutes, flipping the wedges halfway through the cooking time for even browning.
  6. Make the Cilantro-Lime Slaw: While the avocado cooks, combine the coleslaw mix, chopped cilantro, olive oil, lime juice, and 1 teaspoon kosher salt in a mixing bowl. Stir well to combine and allow the flavors to meld.
  7. Warm Tortillas and Assemble Tacos: Warm the corn tortillas until pliable. Fill each tortilla with a few slices of the crispy fried avocado wedges, add a generous scoop of the cilantro-lime slaw, and top with your preferred toppings such as sliced red onion and a drizzle of taco sauce.
  8. Serve Immediately: Serve the tacos immediately to enjoy the contrast of warm tortillas, crunchy avocado fries, and fresh slaw.

Notes

  • Ensure avocados are firm to avoid them becoming too mushy during breading and cooking.
  • Adjust cooking time based on your air fryer model as sizes and heat distribution may vary.
  • You can substitute corn tortillas with flour tortillas if preferred.
  • For extra flavor, add spices such as smoked paprika or chili powder to the panko breadcrumbs before breading.
  • Use avocado oil spray or another high smoke point oil for best air frying results.
  • Serve with your favorite taco sauce or salsa for added taste.
