Instructions

  1. Combine Ingredients: In a large bowl, mix together the oats, chopped walnuts, honey, melted coconut oil, ground cinnamon, kosher salt, and 3/4 cup of the chopped roasted pistachios until everything is evenly coated and well combined.
  2. Prepare Air Fryer Basket: Line your air fryer basket with a small piece of parchment paper, making sure some of the basket’s vent holes remain exposed for proper airflow. Alternatively, you can use a dedicated air fryer basket liner. Spread the oat mixture in a single, even layer inside the basket.
  3. Cook the Granola: Set your air fryer to 325°F (about 163°C). Cook the oats for 15 to 18 minutes, stirring halfway through the cooking time to promote even toasting. The granola should turn a deep golden brown and emit a fragrant aroma when done.
  4. Add Remaining Pistachios and Cool: Stir in the remaining 1/4 cup of chopped pistachios. Allow the granola to cool inside the air fryer for 15 to 20 minutes. As it cools, it will harden and form clusters.
  5. Break Into Pieces and Store: Once fully cooled, break the granola into small clusters or pieces. Transfer the granola to an airtight container and store it for up to two weeks, keeping it fresh and crunchy.
