This easy and flavorful Artichokes in Instant Pot recipe allows you to enjoy tender, perfectly cooked artichokes in just minutes. Using the Instant Pot’s pressure cooking method, the artichokes are steamed with garlic, lemon, and a touch of salt, making them a delightful appetizer or side dish served with your favorite dipping sauce.

Ingredients

Scale

Artichokes

  • 24 Artichokes

Instant Pot Liquid Base

  • 1 cup Water
  • 2 crushed Garlic cloves
  • 2 Lemon wedges
  • Pinch of Salt

Serving

  • Dipping sauce of your choice

Instructions

  1. Prepare the artichokes: Snap off the tough outer leaves to remove the dry parts. Cut off the top third of each artichoke with a sharp knife. Use scissors to snip the sharp tips off the remaining leaves to avoid any prickliness. Finally, trim the stem so the artichokes can stand upright during cooking.
  2. Add flavorings to Instant Pot: Pour 1 cup of water into the Instant Pot. Add the crushed garlic cloves, lemon wedges, and a pinch of salt to infuse the cooking liquid with fresh, zesty aroma.
  3. Place artichokes for steaming: Arrange the prepared artichokes in a single layer on the steamer basket inside the Instant Pot, placing them stem side up to ensure even cooking.
  4. Seal and cook: Close the Instant Pot lid and set the steam vent to the “sealing” position. Select “Manual” mode on High Pressure.
  5. Set cooking time: Depending on the size of your artichokes, set the cooking time to 5 minutes for small artichokes, 10 minutes for medium, or 15 minutes for large artichokes to achieve tender results.
  6. Release pressure: When cooking completes, carefully turn the steam vent to “venting” to perform a quick pressure release, then open the lid.
  7. Serve: Remove the artichokes and serve immediately with your favorite dipping sauce for a healthy, delicious snack or side dish.

Notes

  • Adjust cooking time based on the size of artichokes to avoid overcooking or undercooking.
  • Snipping the sharp leaf tips makes handling and eating easier and safer.
  • Use freshly squeezed lemon juice or wedges to prevent the artichokes from browning during preparation.
  • Try garlic aioli, melted butter with herbs, or vinaigrette as tasty dipping sauces.
  • Store leftover cooked artichokes in the refrigerator and consume within 2 days for best quality.
