Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves, drizzle with olive oil, then wrap tightly in aluminum foil. Roast in the oven for about 30 minutes until the cloves are soft and caramelized. Remove and let cool slightly.
  2. Prepare the Feta: Place the block of feta cheese in a small baking dish. Drizzle with olive oil and sprinkle with dried oregano, red pepper flakes (if using), salt, and pepper evenly over the top.
  3. Bake the Feta: Increase the oven temperature to 425°F (220°C). Place the baking dish with feta in the oven and bake for 15 to 20 minutes, until the cheese is softened and lightly golden.
  4. Combine and Serve: When the garlic is cool enough to handle, squeeze the roasted garlic cloves out of their skins directly into the baked feta. Mash the mixture together with a fork until creamy and well blended. Garnish with fresh herbs and a drizzle of olive oil.
