Instructions

  1. Preheat Oven: Preheat your oven to 200C (390F) to prepare for roasting the potatoes and garlic.
  2. Par-Boil Potatoes: Wash and cube the potatoes, then place them in a saucepan covered with water. Bring to a boil and par-boil for 6-8 minutes, ensuring they are not overcooked. Drain and steam dry for 2-3 minutes to remove excess moisture.
  3. Season Potatoes: Transfer the par-boiled potatoes to a baking dish. Add dried thyme, oregano, salt, black pepper, and 2 tablespoons of olive oil. Stir to coat the potatoes evenly with the seasonings and oil.
  4. Prepare Garlic: Drizzle a little olive oil over the cut top of the garlic head, then wrap it tightly in foil and place it in the baking dish alongside the potatoes.
  5. Initial Roasting: Roast the potatoes and garlic in the preheated oven for 30-40 minutes, until the potatoes are golden, crispy, and almost fully cooked.
  6. Add Feta and Lemon: Remove the baking dish from the oven and take out the foil-wrapped garlic. Place the block of feta in the center of the dish. Optionally, dip one side of the feta in the seasonings before flipping it over. Squeeze the juice of half the lemon over the feta and potatoes.
  7. Final Roasting: Return the dish to the oven and bake for an additional 15 minutes to soften and warm the feta.
  8. Prepare Roasted Garlic: Once cool enough to handle, squeeze the roasted garlic cloves out of their skins and mash them with the flat side of a knife to a paste.
  9. Combine Flavors: Stir the mashed roasted garlic and the juice of the remaining half of the lemon back into the roasted potatoes along with the fresh basil leaves. Gently mix to distribute the flavors evenly, combining the textures of the potatoes and feta.
  10. Finish and Serve: Drizzle the honey over the mixture and sprinkle with the fresh shredded basil and red chili flakes for a touch of heat and sweetness. Serve immediately and enjoy the flavorful medley.
