Instructions

  1. Preheat the Oven: Set your oven to 180°C (160°C fan) or gas mark 4 to ensure it reaches the perfect temperature for baking the oats evenly.
  2. Prepare Oat Flour: Place the porridge oats in a blender and pulse a few times until the oats resemble a coarse flour texture. This will help create a smooth batter.
  3. Mix Batter: Add the baking powder, chopped banana, maple syrup or honey, eggs, and mixed spice or cinnamon to the blended oats. Whizz everything together until the mixture is smooth and well combined.
  4. Add Chocolate Chips or Berries: Gently stir in the chocolate chips or fresh berries to distribute them evenly throughout the batter.
  5. Prepare Ramekins: Lightly oil four heatproof ramekins with flavourless oil to prevent sticking and ease removal after baking.
  6. Divide Batter: Evenly divide the batter among the prepared ramekins, filling each nearly to the top.
  7. Bake: Place the ramekins in the preheated oven and bake for 20 to 25 minutes. The baked oats should rise well and spring back when lightly pressed, indicating they are cooked through.
