Ingredients

Scale

Rice and Eggs

  • 3 cups cooked rice (preferably day-old, chilled)
  • 2 large eggs

Vegetables

  • 1 cup mixed vegetables (such as diced carrots, peas, and corn)
  • 2 tablespoons vegetable oil (for frying)

Bang Bang Sauce

  • 3 tablespoons mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon sriracha sauce (adjust to taste)
  • 1 teaspoon honey or sugar

Instructions

  1. Prepare Sauce: In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey until smooth to create the bang bang sauce. Set aside.
  2. Cook Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Beat the eggs and scramble them in the skillet until just cooked. Remove from the skillet and set aside.
  3. Stir-Fry Vegetables: Add remaining oil to the skillet and stir-fry the mixed vegetables for 2-3 minutes until tender but still crisp.
  4. Add Rice and Eggs: Add the cooked rice to the vegetables and stir well to combine. Return the scrambled eggs to the skillet and mix evenly with the rice and vegetables.
  5. Add Sauce and Toss: Pour the prepared bang bang sauce over the rice mixture. Toss everything together thoroughly so the sauce coats all the ingredients evenly. Cook for another 1-2 minutes to heat through.
  6. Serve: Remove from heat, and serve the Bang Bang Fried Rice hot as a delicious and spicy main or side dish.

Notes

  • For best texture, use day-old rice that has been chilled to prevent clumping during frying.
  • You can customize the vegetables based on preference or availability, such as bell peppers, green beans, or broccoli.
  • Adjust the amount of sriracha in the bang bang sauce to control the heat level.
  • To make it vegetarian, ensure the sauce uses egg-free mayonnaise.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
