Ingredients

Rice and Protein

  • Day-old jasmine rice – 3 cups
  • Beef (thinly sliced) – 8 oz (can substitute with chicken, shrimp, or tofu)

Vegetables

  • Peas – 1/2 cup
  • Carrots (diced) – 1/2 cup
  • Bell peppers (diced) – 1/2 cup
  • Broccoli (optional, small florets) – 1/2 cup
  • Snow peas (optional) – 1/4 cup
  • Corn (optional) – 1/4 cup

Sauce

  • Mayonnaise – 1/4 cup
  • Sweet chili sauce – 2 tablespoons
  • Sriracha – to taste (about 1 teaspoon recommended)

Cooking Oils

  • Oil for sautéing – 1 tablespoon (vegetable or canola oil)
  • Oil for frying vegetables and rice – 1 tablespoon (vegetable or canola oil)

Garnish

  • Chopped green onions – 2 tablespoons

Instructions

  1. Prepare the Rice: If using freshly cooked jasmine rice, spread it out on a baking sheet to cool and dry for about 30 minutes, which reduces moisture to achieve the best fried rice texture.
  2. Make the Bang Bang Sauce: In a small bowl, whisk together 1/4 cup mayonnaise and 2 tablespoons sweet chili sauce until smooth. Stir in Sriracha to taste for desired spice level.
  3. Sauté the Protein: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned and cooked through, about 4-5 minutes. Remove beef from pan and set aside.
  4. Cook the Vegetables: In the same pan, add another tablespoon of oil. Add peas, carrots, bell peppers, broccoli, snow peas, and corn if using. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Add the Rice: Push vegetables to the side, add an extra splash of oil if needed, then add the day-old rice. Break up any clumps and stir-fry all together for 2-3 minutes to heat through.
  6. Combine Everything: Return cooked beef to the pan, pour in the Bang Bang sauce, and stir well to coat all ingredients. Cook an additional 2-3 minutes until everything is hot and flavors meld.
  7. Garnish and Serve: Remove from heat and serve hot. Garnish with chopped green onions and optionally provide extra Bang Bang sauce on the side.

Notes

  • Using day-old rice is recommended for the best texture in fried rice as it prevents clumping and sogginess.
  • You can easily substitute beef with chicken, shrimp, or tofu depending on preference.
  • Adjust the spiciness of the Bang Bang sauce by varying the amount of Sriracha added.
  • Feel free to include or omit optional vegetables like broccoli, snow peas, and corn based on availability and taste.
  • For a gluten-free version, ensure sweet chili sauce and other condiments are labeled gluten-free.
