Tart Crust

Ganache

Instructions

  1. Prepare Tart Crust: In a food processor, pulse together flour, sugar, and salt. Add chilled butter cubes and pulse until mixture resembles coarse crumbs. Add egg yolk and ice water gradually, pulsing until dough comes together. Form dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Blind Bake the Crust: Roll out chilled dough to fit a 9-inch tart pan. Press dough into the pan and trim edges. Prick bottom with a fork, line with parchment paper and fill with pie weights or dried beans. Bake in a preheated 350°F (175°C) oven for 15 minutes. Remove weights and parchment, bake 5-7 minutes more until golden. Let cool completely.
  3. Make Chocolate Ganache: Heat heavy cream in a saucepan over medium heat until just simmering. Pour hot cream over chopped chocolate in a heatproof bowl. Let sit for 2 minutes, then whisk until smooth and glossy. Stir in butter until fully incorporated and ganache is silky.
  4. Fill Tart with Ganache: Pour the ganache into the cooled tart crust, smoothing the top with a spatula.
  5. Add Blueberries: Arrange fresh blueberries evenly on top of the ganache, pressing gently to slightly embed them.
  6. Chill Tart: Refrigerate the tart for at least 2 hours or until the ganache is fully set before serving.
