Ingredients

Scale

Protein

  • 2 cups cooked chicken, shredded or diced

Vegetables

  • 2 cups fresh broccoli florets, chopped
  • 3 cups cauliflower rice (prepared from about 1 medium head of cauliflower)

Dairy

  • 1 1/2 cups shredded cheese (cheddar or mixed cheese blend)
  • 1 cup cream sauce (made from 1 cup heavy cream or cream of chicken soup)

Seasonings

  • Salt and pepper to taste
  • Optional: 1/2 teaspoon garlic powder
  • Optional: 1/2 teaspoon onion powder

Instructions

  1. Prepare the Ingredients: Preheat your oven to 375°F (190°C). If you haven’t already, cook and shred or dice the chicken. Chop the broccoli into small florets. Prepare cauliflower rice by pulsing cauliflower in a food processor until rice-sized pieces form.
  2. Mix Ingredients: In a large bowl, combine the cooked chicken, chopped broccoli, cauliflower rice, shredded cheese, and cream sauce. Add salt, pepper, garlic powder, and onion powder if using, and stir until evenly mixed.
  3. Assemble the Casserole: Transfer the mixture into a greased 9×13-inch baking dish. Spread it out evenly so it bakes uniformly.
  4. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the casserole is hot, bubbly, and the cheese is melted and slightly golden on top.
  5. Serve: Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy this warm, flavorful dish as a wholesome meal.
