Ingredients

Scale

Cookie Dough

  • 1 cup unsalted butter, browned
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups semi-sweet chocolate chips

Topping

  • 1 1/2 cups large marshmallows

Instructions

  1. Prepare the brown butter: In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling the pan frequently, until the butter turns golden brown and emits a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Make the cookie dough: In a large mixing bowl, combine the browned butter with the brown sugar and granulated sugar. Beat until creamy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to the wet ingredients until just combined. Fold in the chocolate chips.
  3. Preheat oven and prepare skillet: Preheat your oven to 350°F (175°C). Lightly grease a 10-inch cast iron skillet or oven-safe skillet with butter or non-stick spray.
  4. Spread cookie dough in skillet: Transfer the cookie dough to the skillet and gently press it evenly to cover the bottom of the pan.
  5. Bake the cookie dough: Place the skillet in the oven and bake for 15-18 minutes, or until the edges are golden and the center is just set but still soft.
  6. Add marshmallow topping: Remove the skillet from the oven and immediately sprinkle the marshmallows evenly over the top of the cookie.
  7. Toast marshmallows: Return the skillet to the oven and bake for another 2-3 minutes, or until the marshmallows are puffed and golden brown. Alternatively, use a kitchen torch to toast marshmallows evenly.
  8. Cool and serve: Allow the skillet cookie to cool for about 5 minutes. Serve warm directly from the skillet with a spoon for an irresistible gooey treat.

Notes

  • Use a cast iron skillet or any oven-safe skillet to ensure even baking.
  • Brown butter adds a rich, nutty flavor that elevates the classic cookie.
  • For extra gooey marshmallows, watch closely to avoid burning during the toasting step.
  • Letting the cookie cool slightly helps it set for easier serving.
  • Customize by adding chopped nuts or using different types of chocolate chips.
