Cookie Dough
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 large egg
Filling
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Prepare the cookie dough: In a large mixing bowl, cream together the softened butter and 1/2 cup brown sugar until smooth and fluffy. Beat in the egg and vanilla extract until combined. Gradually add the flour, cinnamon, and salt, mixing until the dough forms and all ingredients are incorporated. Chill the dough for at least 30 minutes to make it easier to handle.
- Make the filling: In a small bowl, mix together the remaining brown sugar, cinnamon, and melted butter until well combined. This sweet cinnamon mixture will be used as the filling for the cookies.
- Assemble the cookies: Roll out half of the chilled dough on a floured surface to about 1/4 inch thickness. Cut into rectangles. Spoon a small amount of the brown sugar filling onto half of the rectangles, leaving a border around the edges. Place the remaining rectangles on top, gently pressing the edges to seal the filling inside.
- Bake the cookies: Preheat the oven to 350°F (175°C). Place the assembled cookies on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack before glazing.
- Prepare and apply the glaze: In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable. Drizzle or spread the glaze over the cooled cookies for a shiny, sweet finish. Allow the glaze to set before serving.
Notes
- Make sure to chill the dough to prevent spreading during baking.
- Seal the edges of the cookies well to avoid filling leakage.
- You can customize the filling by adding finely chopped nuts or vanilla extract for added flavor.
- Store the cookies in an airtight container at room temperature for up to 5 days.
- For a more festive touch, decorate the glaze with colored sprinkles.
