  • 12 spring roll wrappers

Instructions

  1. Prepare the Vegetable Filling: Heat a tablespoon of oil in a pan over medium heat. Add the finely chopped mixed vegetables and sauté for 4-5 minutes until slightly tender. Season with salt, pepper, and garlic powder if using. Remove from heat and let it cool.
  2. Fill the Wrappers: Lay a spring roll wrapper on a clean surface. Spoon about 2 tablespoons of the sautéed vegetables onto the center of the wrapper. Sprinkle a generous amount (about 2 tablespoons) of shredded cheese over the vegetables.
  3. Roll the Vegetable Rolls: Fold the sides of the wrapper over the filling, then roll it up tightly from one edge to the other. Use a little water to seal the edges to ensure the roll stays closed during baking.
  4. Bake the Rolls: Preheat your oven to 400°F (200°C). Place the rolls seam side down on a baking sheet lined with parchment paper. Optionally, brush or spray the rolls lightly with oil to help them crisp up. Bake for 15-20 minutes or until the wrappers are golden brown and crispy.
