Cheesy Seafood Tortilla Bombs are a deliciously indulgent appetizer or snack featuring a savory seafood filling wrapped in soft tortillas and baked until golden and bubbly. Perfect for entertaining or a flavorful treat, these bites combine the richness of cheese with the fresh taste of seafood wrapped in a warm, crispy tortilla shell.

Ingredients

Scale

Seafood Filling

  • 1 cup cooked mixed seafood (shrimp, crab, scallops), chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Cheese

  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese

Tortillas

  • 6 small flour tortillas
  • Butter or cooking spray, for greasing

Instructions

  1. Prepare the Seafood Filling: In a medium bowl, combine the chopped cooked seafood with mayonnaise, lemon juice, Old Bay seasoning, salt, and pepper. Mix well to create a creamy seafood mixture.
  2. Assemble the Bombs: Lay out each tortilla on a clean surface. Evenly distribute the seafood mixture onto the center of each tortilla, then top with a generous amount of shredded mozzarella and cheddar cheese.
  3. Wrap the Tortillas: Fold the sides of the tortilla over the filling, then roll tightly to form a sealed ‘bomb’ shape. Optionally, secure with toothpicks.
  4. Prepare for Baking: Preheat the oven to 375°F (190°C). Lightly grease a baking sheet with butter or cooking spray, then place the wrapped tortillas seam side down on the sheet.
  5. Bake Until Golden: Bake the tortilla bombs for 15-20 minutes or until the tortillas are golden brown and the cheese inside is melted and bubbly.
  6. Serve Warm: Remove from the oven, allow to cool slightly, and serve warm as a delicious appetizer or snack.

Notes

  • Use any cooked seafood you prefer or have on hand, such as shrimp, crab, or scallops.
  • For extra crispiness, brush the tortillas with melted butter before baking.
  • Serve with a side of salsa, sour cream, or a spicy aioli for dipping.
  • To make ahead, assemble the bombs and keep refrigerated, then bake just before serving.
