This Chipotle Sweet Potato Salad is a smoky, slightly spicy twist on classic potato salad, featuring roasted sweet potatoes tossed in a creamy chipotle mayo dressing. It’s perfect as a flavorful side dish for barbecues, picnics, or any casual meal.

Ingredients

Scale

Salad

  • 3 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle seasoning (or chipotle chili powder)

Dressing

  • 1/2 cup mayonnaise
  • 1 teaspoon chipotle seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat and prepare sweet potatoes: Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil and 1 teaspoon of chipotle seasoning to coat evenly.
  2. Roast the sweet potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast for 25-30 minutes or until tender and slightly caramelized, tossing halfway through for even cooking.
  3. Make the dressing: In a bowl, combine the mayonnaise with 1 teaspoon of chipotle seasoning, and season with salt and pepper. Mix well until smooth and flavorful.
  4. Toss the salad: Once the sweet potatoes have cooled slightly, transfer them to a large bowl and toss with the chipotle mayo dressing until evenly coated.
  5. Serve: Serve immediately or chill for 30 minutes to let the flavors meld. This salad can be enjoyed warm or cold.

Notes

  • You can adjust the chipotle seasoning to your heat preference, adding more for extra spice.
  • For a lighter version, substitute mayo with Greek yogurt or a blend of mayo and yogurt.
  • This salad pairs well with grilled meats or can be served as a vegan dish by substituting vegan mayo.
  • Leftovers keep well refrigerated for up to 2 days.
