Scale

Bread Ingredients

  • 2 cups grated zucchini
  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Streusel Topping

  • ½ cup brown sugar, packed
  • ⅓ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 4 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Prepare the Batter: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan. In a large mixing bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. In another bowl, beat the sugar, oil, eggs, and vanilla extract until smooth. Fold the grated zucchini into the wet mixture. Gradually combine the dry ingredients into the wet mixture, stirring just until incorporated.
  2. Make the Streusel Topping: In a small bowl, mix the brown sugar, flour, and cinnamon. Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.
  3. Assemble and Bake: Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel topping evenly over the batter. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  4. Cool and Serve: Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Slice and enjoy your moist cinnamon streusel zucchini bread!

Notes

  • Make sure to grate the zucchini finely and squeeze out excess moisture to avoid a soggy bread.
  • You can substitute half the all-purpose flour with whole wheat flour for a healthier twist.
  • The bread tastes even better the next day once flavors meld together.
  • Store covered at room temperature for up to 3 days or freeze for longer storage.
  • Add chopped nuts or raisins to the batter if desired for extra texture and flavor.
