Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand. Press firmly and evenly into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add sugar and continue beating. Add eggs one at a time, mixing well after each addition. Stir in brewed coffee and vanilla extract until fully incorporated and the mixture is smooth.
  3. Assemble and bake: Pour the coffee cream cheese filling over the prepared crust, smoothing the top with a spatula. Bake in a preheated oven at 325°F (163°C) for 50 to 60 minutes, or until the edges are set and the center is just slightly jiggly.
