Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting the chicken to crispy perfection.
  2. Prepare the Chicken: Pat the chicken thighs dry with paper towels; then season them evenly on both sides with salt and black pepper.
  3. Arrange in Pan: Drizzle olive oil into a large roasting pan and place the seasoned chicken thighs skin-side up. Scatter the fresh cranberries evenly around the chicken. Add the sprigs of rosemary on top and around for flavor infusion.
  4. Roast: Place the pan in the oven and roast for 35 to 40 minutes or until the chicken is cooked through, the skin is crispy, and the internal temperature reaches 165°F (74°C). The cranberries will burst and create a flavorful sauce.
