Ingredients

Scale

Main Ingredients

  • 1 cup mango puree (fresh or canned)
  • 1/2 cup sugar
  • 1 tablespoon gelatin powder
  • 1/4 cup water (for gelatin)
  • 1 cup evaporated milk

Instructions

  1. Heat Mango Puree and Sugar: Pour the mango puree into a saucepan, add sugar, and gently heat over medium-low heat while stirring until the sugar dissolves completely, but do not bring it to a boil.
  2. Dissolve Gelatin: In a small bowl, sprinkle gelatin powder over 1/4 cup of cold water and let it bloom for 5 minutes. Then gently warm the gelatin mixture until it becomes clear and liquid, without boiling.
  3. Combine Ingredients: Slowly add the dissolved gelatin into the warm mango mixture and stir well to combine. Remove from heat and allow to cool slightly.
  4. Mix with Evaporated Milk: Stir in the evaporated milk thoroughly until the mixture is smooth and uniform in texture.
  5. Chill to Set: Pour the mango pudding mixture into serving cups or molds. Refrigerate for at least 4 hours or until fully set and firm.

Notes

  • For a vegan alternative, use agar-agar instead of gelatin.
  • Adjust sugar to taste depending on the sweetness of the mangoes.
  • Serve chilled and garnish with fresh mango chunks or mint leaves for added presentation.
  • Do not boil the gelatin mixture to prevent losing its gelling properties.
  • This dessert can be made a day in advance and kept refrigerated.
