Ingredients

Scale

For the Chicken Scampi:

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup white wine (optional)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh parsley

For the Garlic Parmesan Rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the Rice: In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Add rice and stir to coat with butter. Pour in chicken broth, season with salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed. Remove from heat and stir in Parmesan cheese until melted and creamy.
  2. Cook the Chicken: While the rice cooks, heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Add chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove chicken and set aside.
  3. Make the Scampi Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Carefully pour in white wine and lemon juice, scraping up any browned bits from the pan. Let the sauce simmer and reduce slightly for 2-3 minutes. Stir in remaining tablespoon of butter until melted and the sauce is glossy.
  4. Combine and Serve: Return cooked chicken to the skillet and coat with the scampi sauce. Cook for an additional 1-2 minutes to warm through. Plate the garlic Parmesan rice and top with the chicken scampi. Garnish with chopped fresh parsley and serve immediately.

Notes

  • You can substitute white wine with extra chicken broth or lemon juice if preferred.
  • Use freshly grated Parmesan for the best flavor and melting quality.
  • Adjust garlic quantity based on your taste preference.
  • If you prefer, use brown rice but increase the cooking time according to package directions.
  • Garnish with additional parsley or a squeeze of fresh lemon juice for added brightness.
