A rich and flavorful Slow Cooker Chicken Marsala recipe featuring tender chicken breasts simmered in a creamy mushroom and Marsala wine sauce. This easy, hands-off dish brings Italian-inspired flavors to your table with minimal prep.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Mushrooms

  • 8 oz cremini or white mushrooms, sliced

Sauce

  • 1 cup Marsala wine
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon butter

Instructions

  1. Prepare Ingredients: Slice the mushrooms and mince the garlic. Season the chicken breasts with salt and pepper on both sides.
  2. Sear Chicken (Optional): In a skillet, heat olive oil over medium-high heat and quickly sear the chicken breasts about 2 minutes per side until browned. This step adds flavor but can be skipped to simplify.
  3. Combine in Slow Cooker: Place the chicken breasts in the slow cooker. Add sliced mushrooms, minced garlic, Marsala wine, chicken broth, butter, and a pinch of salt and pepper.
  4. Cook: Cover and cook on low for 4-6 hours or until the chicken is tender and cooked through.
  5. Add Cream: About 30 minutes before serving, stir in the heavy cream and continue cooking.
  6. Serve: Once the sauce is creamy and chicken is cooked perfectly, serve hot over pasta, mashed potatoes, or polenta.

Notes

  • For a thicker sauce, remove chicken after cooking and simmer the sauce on high in the slow cooker or stove until desired thickness.
  • Using seared chicken enhances flavor but is optional.
  • Fresh mushrooms provide better texture and flavor than canned.
  • Adjust salt and pepper according to taste preferences.
