Chicken and Vegetables
- 4 boneless, skinless chicken breasts
- 3 medium carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Dumplings
- 1 can (16 oz) refrigerated biscuit dough (about 8 biscuits)
- 2 tablespoons all-purpose flour (optional, for dusting)
- Prepare the Crockpot Base: Place the chicken breasts, sliced carrots, celery, onion, and minced garlic into the slow cooker. Pour in the chicken broth and sprinkle dried thyme, dried parsley, salt, and pepper on top. Stir to combine ingredients lightly.
- Slow Cook Chicken and Vegetables: Cover the crockpot and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and vegetables are tender.
- Shred the Chicken: Once cooked, remove the chicken breasts to a cutting board and shred them using two forks. Return the shredded chicken to the crockpot and stir to mix well with the broth and vegetables.
