Scale

Ingredients

  • 12 Medjool dates, pitted
  • 1/2 cup creamy peanut butter
  • 200g dark or milk chocolate, chopped
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. Prepare the Dates: Carefully slice each date lengthwise on one side to create an opening, removing the pits if not already pitted, to make space for the filling.
  2. Stuff with Peanut Butter: Using a small spoon or knife, fill each date cavity generously with creamy peanut butter, ensuring each date is well filled but not overflowing.
  3. Melt the Chocolate: In a microwave-safe bowl or using a double boiler, melt the chopped chocolate until smooth, stirring frequently to avoid burning.
  4. Dip Dates in Chocolate: Using a fork or skewer, dip each stuffed date into the melted chocolate, coating it fully or halfway according to your preference. Allow excess chocolate to drip back into the bowl.
  5. Sprinkle Peanuts: Immediately sprinkle chopped roasted peanuts over the chocolate coating while it is still wet to ensure they stick well.
  6. Chill to Set: Place the coated dates on a parchment-lined baking sheet and refrigerate for at least 30 minutes or until the chocolate is set and firm.

Notes

  • Use Medjool dates for their large size and softness, which work best for stuffing.
  • For a healthier option, use dark chocolate with at least 70% cocoa content and natural peanut butter without added sugars.
  • Can be stored in an airtight container in the refrigerator for up to one week.
  • Feel free to substitute peanuts with other nuts like almonds or walnuts according to preference.
