- 250ml boiling water
- 1 tsp baking soda
- 175g self-raising flour
- 150g brown sugar
- 100g unsalted butter, softened
- 2 large eggs
Toffee Sauce
- 200g light brown sugar
- 100g unsalted butter
- 250ml double cream
- Prepare the dates: Place the chopped dates in a bowl and pour over the boiling water. Stir in the baking soda and set aside to soak while preparing the batter, allowing the dates to soften and the mixture to cool.
- Make the batter: Cream together the softened butter and brown sugar until light and fluffy. Gradually beat in the eggs. Fold in the flour carefully, then stir in the soaked date mixture until you have a smooth batter.
- Bake the pudding: Preheat your oven to 180°C (350°F) and grease a baking dish. Pour the batter into the dish and bake for 30-35 minutes, or until a skewer inserted into the center comes out clean.
- Prepare the toffee sauce: While the pudding is baking, combine the light brown sugar, butter, and double cream in a saucepan. Heat gently, stirring until the sugar dissolves and the sauce is smooth and thickened.
- Serve: When the pudding is done, cut into portions and pour over the warm toffee sauce before serving. Optionally, serve with extra cream or ice cream for added indulgence.
