Instructions

  1. Prepare Pancake Batter. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix buttermilk, egg, and melted butter. Combine wet and dry ingredients, stirring until just combined to form pancake batter.
  2. Cook Sausage. Cook breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain excess fat and set aside to cool slightly. Alternatively, use pre-cooked sausage patties cut to size.
  3. Form Pancake Rounds. Heat a non-stick griddle or skillet over medium heat. Pour small rounds of pancake batter (about 2 inches in diameter) and cook until bubbles form on the surface and edges begin to set, about 1-2 minutes. Flip and cook the other side until golden brown, about 1 minute more. Repeat until all batter is used.
  4. Assemble Bites. Place a cooked pancake round on a baking sheet lined with parchment. Add a piece of cooked sausage, followed by a piece of cheese, then top with another pancake round to create a sandwich.
  5. Bake the Bites. Preheat the oven to 350°F (175°C). Bake the assembled McGriddle Bites on the baking sheet for 5-7 minutes, or until the cheese melts and the bites are warmed through.
