Pretzel Dough

  • 4 tbsp unsalted butter, melted

Boiling Solution

  • 10 cups water
  • 2/3 cup baking soda

For Finishing

  • 1 large egg, beaten (for egg wash)
  • Coarse kosher salt, for sprinkling

Instructions

  1. Prepare the Pretzel Dough: In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy. Stir in melted butter, salt, and gradually add flour until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic. Place dough in an oiled bowl, cover, and let rise for about 1 hour until doubled.
  2. Divide and Roll Dough: Punch down the risen dough and divide into 8 equal pieces. Roll each piece into a long rope approximately 12 inches in length, to wrap around the hot dogs.
  3. Wrap Hot Dogs: Wrap each hot dog with a dough rope, slightly overlapping the dough as you go, pressing seams gently to seal.
  4. Prepare Baking Soda Bath: Preheat oven to 425°F (220°C). In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a rolling boil.
  5. Boil Pretzel Dogs: Using a slotted spoon, carefully drop each wrapped hot dog into the boiling baking soda water for 30 seconds, flip, and boil the other side for 30 seconds. Remove and drain on a wire rack.
  6. Apply Egg Wash and Salt: Place boiled pretzel dogs onto a parchment-lined baking sheet. Brush each with beaten egg to give them a glossy finish, then sprinkle with coarse kosher salt.
  7. Bake: Bake in the preheated oven for 12-15 minutes or until the pretzel dough is golden brown and cooked through.
