Ingredients

Scale

Cake Batter

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 2 teaspoons chai spice blend (cinnamon, cardamom, ginger, cloves, nutmeg)
  • 1 tablespoon espresso powder or 1 shot of brewed espresso
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk

Instructions

  1. Prepare the Cake Batter: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. In a separate bowl, whisk together the flour, chai spices, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture alternately with the buttermilk, beginning and ending with the dry ingredients. Stir in the espresso powder or brewed espresso until evenly incorporated.
  2. Bake the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. Pour the batter evenly into the prepared pan. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the cake springs back when lightly pressed.
  3. Cool and Serve: Remove the cake from the oven and allow it to cool in the pan for about 15 minutes. Then transfer the cake to a wire rack to cool completely before slicing and serving. This helps the flavors to set and the cake to firm up for clean cuts.

Notes

  • Chai spice blend can be adjusted to taste or homemade using equal parts cinnamon, cardamom, ginger, cloves, and nutmeg.
  • Espresso powder provides a deeper coffee flavor; brewed espresso can be used but may slightly alter batter consistency.
  • Ensure ingredients like butter and eggs are at room temperature for best mixing results.
  • For a richer cake, consider adding a glaze or frosting flavored with chai or espresso.
  • Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
