Easy Taco Rice Bowls combine seasoned ground beef with rice, black beans, corn, and melted cheese for a quick, flavorful, and satisfying meal perfect for any day of the week.

Ingredients

Scale

Protein

  • 1 lb ground beef
  • 1 packet taco seasoning (about 2 tbsp)

Base

  • 2 cups cooked rice (white or brown)

Toppings

  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn, drained
  • 1 cup shredded cheddar cheese (or cheese of choice)

Instructions

  1. Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Break it apart with a spatula and cook until browned and no longer pink, about 7-10 minutes. Drain any excess fat.
  2. Add Taco Seasoning: Sprinkle the taco seasoning over the cooked beef. Stir in 2/3 cup water and simmer until the mixture thickens slightly, about 3-5 minutes.
  3. Prepare the Rice: While the beef is cooking, prepare the rice according to package instructions or use pre-cooked rice. Fluff it with a fork once done.
  4. Assemble the Bowls: Place a generous scoop of rice into each bowl. Top with the seasoned ground beef, then add black beans and corn evenly over each bowl.
  5. Add Cheese and Serve: Sprinkle shredded cheese on top of the warm ingredients so it slightly melts. Serve immediately, optionally garnished with fresh cilantro or a squeeze of lime if desired.

Notes

  • For extra freshness, add diced tomatoes, avocado slices, or sour cream.
  • Use brown rice for a healthier option with more fiber.
  • Black beans and corn can be swapped for your favorite veggies or beans.
  • For a spicier bowl, add diced jalapeños or hot sauce to taste.
  • Leftover bowls store well in the fridge for up to 3 days; reheat thoroughly before serving.
