For the Beef
- 1 lb ground beef
- 1 packet taco seasoning (about 1 oz)
For the Bowls
- 2 cups cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup canned corn, drained
- 1 cup shredded cheddar cheese
- Cook the Ground Beef: Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 6-8 minutes. Drain any excess fat from the skillet.
- Add Taco Seasoning: Sprinkle the taco seasoning over the cooked beef, add 1/4 cup water, and stir well to combine. Simmer for 3-5 minutes until the seasoning is well absorbed and sauce slightly thickens.
- Prepare the Rice: While the beef cooks, prepare 2 cups of rice according to package instructions if not already cooked.
- Assemble the Bowls: Divide the cooked rice into bowls. Top with a generous portion of the seasoned ground beef, then add black beans and corn evenly over each bowl.
- Add Cheese and Serve: Sprinkle shredded cheddar cheese over the top so it begins to melt from the warmth of the beef and rice. Serve immediately for a delicious and hearty meal.
Notes
- Use brown rice for a healthier alternative.
- Customize toppings with diced tomatoes, avocado, or sour cream.
- For a vegetarian version, substitute the ground beef with cooked lentils or textured vegetable protein and use vegetarian taco seasoning.
- Can be made gluten-free by ensuring taco seasoning is gluten-free.
