Instructions

  1. Preheat Oven and Prepare Dish: Heat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking, then set it aside.
  2. Cook Pasta: Bring a large pot of salted water to a boil (about 1 teaspoon salt). Add the rotini pasta and cook until al dente following package instructions. Drain the pasta well but do not rinse.
  3. Mix Seasonings and Sauces: In a large mixing bowl, combine sour cream, salsa, mild taco seasoning, cumin, garlic powder, and onion powder. Stir well until the mixture is smooth and uniform.
  4. Combine Pasta and Ingredients: Add the drained pasta to the sour cream mixture and fold gently to coat. Then, add the drained corn, rinsed black beans, cooked chicken, and 1 cup of shredded cheese. Stir all ingredients together to blend evenly.
  5. Assemble and Bake: Pour the combined mixture into the prepared baking dish and spread evenly. Sprinkle the remaining 1 cup of shredded cheese evenly on top. Cover the dish tightly with tin foil and bake in the preheated oven for 20 minutes.
  6. Bake Uncovered and Garnish: Remove the tin foil and bake for an additional 5 minutes to melt and slightly brown the cheese. Once out of the oven, garnish optionally with dollops of sour cream, diced tomatoes, chopped cilantro, and sliced avocado.
