Ingredients

Scale

For the Flank Steak

  • 1.5 pounds flank steak, trimmed
  • Salt, to taste
  • Black pepper, to taste

For the Filling

  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (such as mozzarella or provolone)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper, then remove from heat and let cool slightly. Mix in the shredded cheese with the spinach.
  2. Prepare the Steak: Lay the flank steak flat on a clean surface and season both sides with salt and black pepper evenly. Spread the spinach and cheese filling evenly over the surface of the steak, leaving a small border around the edges.
  3. Roll the Steak: Starting from one long edge, carefully roll the steak tightly into a log shape, enclosing the spinach and cheese filling. Secure with kitchen twine if needed to hold the roll in place.
  4. Slice the Pinwheels: Using a sharp knife, slice the rolled steak into 1 to 1.5-inch pinwheels. Arrange the pinwheels cut-side up on a baking sheet lined with parchment paper or foil.
  5. Bake the Pinwheels: Preheat the oven to 375°F (190°C). Bake the pinwheels for 18-20 minutes or until the steak is cooked to your desired doneness and the cheese is melted and bubbly.
  6. Serve: Remove from oven, let rest for a few minutes, and then serve the pinwheels warm. They pair well with a fresh green salad or roasted vegetables.

Notes

  • You can use other cheeses like feta, cream cheese, or cheddar for different flavors.
  • For extra flavor, marinate the flank steak for 1 hour before assembling.
  • Make sure not to overcook the steak to keep it tender and juicy.
  • These pinwheels can be prepared in advance and baked just before serving.
