Cookie Dough
- 1 cup peanut butter (creamy or chunky)
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Filling
- 1/2 cup marshmallow fluff
- Prepare the Dough: In a large mixing bowl, combine the peanut butter, granulated sugar, egg, and vanilla extract. Mix until smooth and creamy. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually blend the dry ingredients into the wet ingredients until a soft dough forms.
- Shape the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Divide the dough into equal portions and flatten each slightly. Add a dollop of marshmallow fluff in the center of half the dough portions, then top with the remaining dough portions, sealing the edges gently to enclose the fluff.
- Bake: Place the cookies on the prepared baking sheet, about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. The cookies should remain soft in the center.
- Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. This helps the marshmallow fluff set inside and prevents them from falling apart.
Notes
- Make sure the marshmallow fluff is not too hot when adding to the cookie dough to avoid it melting out during baking.
- For a crunchier texture, use crunchy peanut butter instead of creamy.
- Store baked cookies in an airtight container at room temperature for up to 3 days.
- These cookies can be frozen before baking by shaping and filling, then placed on a baking sheet to freeze. Once frozen, store in a zip-lock bag and bake directly from frozen, adding a couple of extra minutes to the baking time.
