Ingredients

Scale

Tortillas

  • 8 large flour tortillas

Egg Mixture

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste

Cheese

  • 1 cup shredded cheddar cheese

Breakfast Fillings (choose any)

  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup sliced mushrooms

Instructions

  1. Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  2. Cook the Eggs: Pour the egg mixture into a non-stick skillet over medium heat. Stir gently to scramble the eggs until just cooked through but still soft. Remove from heat.
  3. Assemble the Quesadillas: Lay out a tortilla and evenly spread a portion of scrambled eggs on half of it. Sprinkle shredded cheese and your choice of breakfast fillings over the eggs. Fold the tortilla over to cover the fillings.
  4. Cook the Quesadillas: Heat a clean skillet over medium heat. Cook each folded quesadilla for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  5. Cool and Freeze: Allow the quesadillas to cool completely on a wire rack. Wrap each quesadilla tightly in plastic wrap or foil, then place in a freezer-safe bag or container.
  6. Reheat Before Serving: To reheat, cook the frozen quesadilla in a skillet over medium heat for 4-5 minutes per side or microwave for 1-2 minutes until heated through.

Notes

  • You can customize the breakfast fillings to suit your taste by adding veggies, meats, or beans.
  • Use whole wheat or gluten-free tortillas if desired.
  • Freezer quesadillas can be stored for up to 1 month.
  • For a crispier texture upon reheating, use a skillet or air fryer instead of microwaving.
  • Make sure quesadillas are completely cooled before freezing to prevent sogginess.
