Ingredients

Scale

Sugar Cookie Crust

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream or milk

Fresh Fruit Topping

  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup kiwi slices
  • 1 cup mandarin orange segments
  • 1 cup grapes, halved

Instructions

  1. Prepare the Sugar Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  2. Bake the Crust: Preheat the oven to 350°F (175°C). Press the dough evenly into a greased or parchment-lined 12-inch pizza pan or large round baking sheet. Bake the crust for 12-15 minutes or until the edges are golden brown. Remove from oven and allow to cool completely.
  3. Make the Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese until smooth. Add powdered sugar, vanilla extract, and heavy cream, and continue to beat until creamy and spreadable.
  4. Assemble the Fruit Pizza: Spread the cream cheese frosting evenly over the cooled sugar cookie crust. Arrange the fresh fruit slices and segments decoratively on top of the frosting, covering the entire surface evenly.
  5. Chill and Serve: Refrigerate the assembled fruit pizza for at least 30 minutes to allow the frosting to set slightly before slicing and serving. Enjoy chilled for best flavor and texture.

Notes

  • Use a variety of fresh fruits to add color and flavor diversity.
  • For a vegan version, substitute cream cheese and butter with plant-based alternatives.
  • The cookie crust can be made ahead and frozen for convenience.
  • Make sure the crust is completely cooled before frosting to prevent melting.
  • Store leftovers in the refrigerator for up to 2 days for freshness.
