Ingredients

Scale

For the Garlic Herb Chicken

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste

For the Mashed Potatoes

  • 4 large russet potatoes, peeled and diced
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk
  • Salt and pepper, to taste

For the Glazed Carrots

  • 4 large carrots, peeled and sliced
  • 2 tbsp unsalted butter
  • 1 tbsp brown sugar
  • Salt, to taste

Instructions

  1. Cook the Garlic Herb Chicken: In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté until fragrant, about 1 minute. Season chicken breasts with salt, pepper, parsley, and thyme, then place them in the skillet. Cook for 6-7 minutes on each side until the chicken is cooked through and golden brown. Remove chicken from the skillet and keep warm.
  2. Prepare the Mashed Potatoes: While the chicken cooks, place peeled and diced potatoes in a large pot of salted water. Bring to a boil and cook until potatoes are fork-tender, about 15 minutes. Drain and mash potatoes with butter and warm milk until smooth and creamy. Season with salt and pepper to taste.
  3. Make the Glazed Carrots: In a medium saucepan, melt butter over medium heat. Add sliced carrots and cook for 4-5 minutes until they start to soften. Stir in brown sugar and a pinch of salt, cooking an additional 5-7 minutes until carrots are tender and glazed, stirring occasionally.
  4. Serve: Plate the garlic herb chicken alongside a generous scoop of mashed potatoes and glazed carrots. Serve warm and enjoy this flavorful, comforting meal.

Notes

  • Use fresh herbs for the best aroma and flavor.
  • Adjust the butter and milk in mashed potatoes to your desired creaminess.
  • Glazed carrots can be substituted with honey for a different sweetness profile.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on stovetop or microwave.
