Ingredients

Scale

Halloumi Preparation

  • 225250g (8oz) halloumi, block (Cyprus made PDO stamped recommended)
  • 2 tbsp olive oil

Toppings

  • 1 1/2 tbsp honey (or substitute with maple syrup)
  • 1/2 tsp fresh thyme leaves and tiny sprigs
  • 23 pinches chili flakes (red pepper flakes), optional

Instructions

  1. Slice and dry halloumi: Cut the halloumi into 1-1.25 cm (0.4 – 0.5 inch) thick slices. Place the slices on paper towels and pat them dry to remove excess moisture.
  2. Warm serving plate: Heat a serving plate so the halloumi stays warm when plated.
  3. Heat the oil: Pour olive oil into a non-stick pan and warm it over medium-high heat.
  4. Pan-fry the halloumi: Carefully place the halloumi slices into the hot oil. Cook for approximately 1 1/2 minutes on one side until golden brown. Shuffle slices as needed for even cooking.
  5. Flip and cook the other side: Using a spatula and butter knife to guide, gently turn the slices over. Cook the other side for 1 to 1 1/2 minutes until it is also golden.
  6. Transfer to the plate: Remove the halloumi slices from the pan and place them on the warmed serving plate.
  7. Add toppings quickly: Drizzle honey evenly over some slices and lightly on others. Sprinkle fresh thyme leaves and chili flakes if desired.
  8. Serve immediately: Enjoy the halloumi while warm and crisp on the outside with a soft inside, before it turns squeaky. Optionally, use leftover honey on the plate to mop up with bread.

Notes

  • Use Cyprus made PDO stamped halloumi for the best authentic flavor and texture.
  • Patting the halloumi dry is essential to achieve a golden crust when frying.
  • Honey can be substituted with maple syrup for a vegan-friendly variant.
  • Serving the halloumi on a warmed plate keeps it at an ideal temperature for eating.
  • Chili flakes are optional and add a subtle spicy kick if desired.
