Pie Crust

  • 180 g Flour All-purpose (1.25 cup)
  • 100 g Butter or margarine (3.5 oz)
  • 2 tbsp Water
  • 1 pinch Salt

Filling

  • 500 g Ground beef
  • 2 tbsp Taco seasoning
  • 100 ml Water (½ cup)

Custard & Cheese

  • 150 g Cheese (Gouda or Cheddar) (5.30 oz)
  • 4 Eggs
  • 200 ml Milk (0.85 cup)
  • 200 ml Whipping cream (0.85 cup)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Pie Crust: Cut the cold butter into small pieces. Combine with flour and a pinch of salt. Pinch together by hand or pulse in a food processor until the mixture resembles coarse crumbs.
  2. Make the Dough: Add 2 tablespoons of cold water and mix quickly to form a dough. Press the dough evenly into a 25-28 cm (9.5-11 inch) pie tin. Use a fork to prick the bottom of the crust to prevent bubbling.
  3. Protect the Edges: Tear a narrow strip of aluminum foil and cover the edges of the pie crust to prevent overbaking or burning during prebaking.
  4. Pre-bake the Crust: Place the pie crust in the middle of a preheated oven at 200° C (392° F) and bake for 10 minutes. Remove the foil after prebaking if desired.
  5. Cook the Ground Beef Taco Filling: In a skillet over medium heat, brown 500 g (1 pound) of ground beef until no pink remains, breaking it up as it cooks.
  6. Season the Meat: Stir in 2 tablespoons of taco seasoning evenly throughout the meat.
  7. Simmer the Filling: Add 100 ml (½ cup) of water and let the mixture simmer for a few minutes, stirring occasionally, until the sauce thickens and flavors meld. Remove from heat.
  8. Prepare Cheese: Dice 150 g of Gouda or Cheddar cheese into small cubes.
  9. Make the Egg Mixture: In a bowl, whisk together 4 eggs, 200 ml milk, 200 ml whipping cream, salt, and pepper to taste until smooth and combined.
  10. Assemble the Quiche: Remove the prebaked pie crust from the oven. Layer the taco meat evenly on the bottom of the crust, sprinkle the diced cheese over the meat, and pour the egg mixture on top.
  11. Bake the Quiche: Return the assembled quiche to the oven and bake at 200° C (392° F) for 30 minutes, or until the custard is set and the top is golden brown.
  12. Cool and Serve: Let the quiche cool for a few minutes before slicing and serving warm. Enjoy!
