Main Ingredients
- 20 oz. bagged shredded hash browns
- 1 and ½ tsp. salt, divided
- 1/2 tsp. garlic powder, divided
- 1/4 tsp. black pepper
- 1 Tbsp. cooking oil
- 1 lb. ground turkey
- 1 tsp. poultry seasoning (store-bought or homemade)
- ½ tsp. garlic powder
- 1 small onion, chopped
- 2 cups frozen mixed veggies, thawed
- 2 Tbsp. all-purpose flour
- 1 and ½ cups low-sodium chicken broth
- ½ cup heavy cream or half and half
- Fresh parsley or thyme, optional
- Cook Hash Browns: Cook the shredded hash browns in a skillet according to the package directions. If they are unseasoned, season with 1/2 teaspoon salt, 1/4 teaspoon garlic powder, and 1/4 teaspoon black pepper. Stir well, then transfer the cooked potatoes to a plate and cover with foil to keep warm.
- Brown the Turkey: Wipe out the skillet and place it over medium-high heat. Add 1 tablespoon cooking oil and allow it to heat. Add the ground turkey, spreading it out evenly. Sprinkle with the remaining 1 teaspoon salt, 1/4 teaspoon garlic powder, and the poultry seasoning. Let the turkey cook undisturbed until browned on the bottom, about 3 to 4 minutes.
- Sauté Onions and Veggies: Add the chopped onion to the skillet on top of the turkey and stir to combine. Cook until the onions begin to soften, about 2 to 3 minutes. Stir in the thawed frozen mixed vegetables.
- Make the Creamy Sauce: Sprinkle the turkey and vegetable mixture with the 2 tablespoons of all-purpose flour and stir well. Slowly drizzle in the 1 and ½ cups low-sodium chicken broth while stirring. Continue to cook, stirring frequently, until the mixture thickens and begins to simmer, about 2 to 3 minutes. Stir in the ½ cup heavy cream or half and half and cook for an additional 30 seconds, stirring constantly.
- Combine and Serve: Remove the skillet from heat. Spoon the cooked turkey and vegetable mixture evenly, then top with the warm hash browns. Allow the steam to reheat the potatoes. Garnish with fresh parsley or thyme if desired before serving.
Notes
- Use low-sodium chicken broth to control the salt content in the dish.
- For a lighter version, substitute half and half instead of heavy cream.
- Add extra spices like smoked paprika or cayenne pepper to give the dish a little heat.
- Frozen mixed vegetables can be any combination of carrots, peas, corn, and green beans.
- Serve with a side salad or crusty bread for a complete meal.
