Ingredients

Scale

For the Cake Batter

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract

For the Filling

  • 1 cup guava paste, cut into small cubes or thin slices

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan to prevent sticking.
  2. Make the Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a larger bowl, cream the softened butter and sugar together until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract. Alternately add the dry ingredients and sour cream to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined to achieve a tender batter.
  3. Layer the Cake and Guava Paste: Pour half of the batter into the prepared pan and spread it evenly. Layer the guava paste pieces evenly over the batter. Then, gently spread the remaining batter on top to cover the guava layer. This creates a beautiful layered effect and infuses the cake with guava flavor.
  4. Bake the Cake: Place the pan in the preheated oven and bake for about 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown on top and set in the middle.
  5. Cool and Serve: Remove the cake from the oven and allow it to cool in the pan for 15 minutes. Then transfer to a wire rack to cool completely before slicing. This cake pairs wonderfully with a hot cup of coffee or tea.

Notes

  • Ensure the guava paste is cut into small pieces to distribute the flavor evenly.
  • You can substitute sour cream with yogurt to make the cake a bit lighter.
  • For added texture, consider sprinkling a crumb topping before baking.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This cake can also be made in a loaf pan; adjust baking time accordingly.
