Chocolate Coating

  • 8 drops of liquid stevia
  • 1 ½ teaspoons maple syrup

Instructions

  1. Make Filling Option 1: In a medium bowl, combine ½ cup natural peanut butter, 2 tablespoons coconut flour, 1 ½ tablespoons maple syrup, and a pinch of sea salt. Stir until a dough forms.
  2. Make Filling Option 2: Place ½ cup powdered peanut butter, ¼ cup unsweetened vanilla almond milk, 3 roughly chopped pitted medjool dates, and ¼ teaspoon sea salt into a food processor. Process for about 1 minute until dough forms a ball.
  3. Form Eggs: Break off pieces of dough about 1-2 tablespoons in size. Shape each piece into an egg shape. Place them on a parchment-lined baking sheet or plate and freeze for about one hour until firm.
  4. Make Coating: Once the peanut butter eggs are frozen, mix 2 ½ tablespoons cocoa powder, 2 ½ tablespoons melted coconut oil, 8 drops liquid stevia, and 1 ½ teaspoons maple syrup in a bowl to create the chocolate dipping sauce.
  5. Dip Eggs: Remove frozen peanut butter eggs from the freezer. Using a fork, dip each egg into the chocolate mixture to completely cover it, allowing any excess to drip off. Drizzle any leftover chocolate over the eggs if desired.
