Instructions

  1. Cook the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop cooking and cool the pasta.
  2. Prepare the vegetables. While pasta cooks, wash and dice the cucumber into small pieces, removing seeds if desired for less moisture.
  3. Make the dressing. In a medium bowl, combine Greek yogurt, chopped dill, parsley, lemon juice, minced garlic, salt, and pepper. Mix well until smooth and creamy.
  4. Combine all ingredients. In a large mixing bowl, add the cooled pasta and diced cucumber. Pour the yogurt dressing over and toss gently to coat everything evenly.
  5. Chill and serve. Refrigerate the salad for at least 30 minutes to let flavors meld. Serve cold as a light meal or side dish.
