These High Protein Frozen Peanut Butter Greek Yogurt Bites are a delicious and nutritious treat combining the creaminess of Greek yogurt and peanut butter with the rich taste of dark chocolate. Perfect as a high-protein snack or dessert, these bite-sized delights are easy to make and freezer-friendly.

Ingredients

Scale

Yogurt Mixture

  • 1/2 cup full fat Greek yogurt
  • 1/4 cup powdered peanut butter (such as PB Fit or PB2)
  • 1 tablespoon creamy peanut butter
  • 1/2 tablespoon maple syrup

Chocolate Coating

  • 1/2 cup dark chocolate chips (such as Lily’s)
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the yogurt mixture: In a medium bowl, combine the full fat Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Mix thoroughly until the mixture is smooth and well blended.
  2. Fill the molds: Spoon the yogurt mixture into silicone molds or an ice cube tray, gently packing the mixture to avoid air pockets or gaps.
  3. Melt the chocolate coating: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in short bursts (about 20-30 seconds), stirring in between, until the chocolate is fully melted and smooth.
  4. Freeze and coat: Freeze the yogurt-filled molds for about 1 hour until set. Once set, carefully pop the yogurt bites out of the molds and dip each piece into the melted chocolate until fully coated.
  5. Final freezing: Place the chocolate-coated bites back onto a tray or plate and return them to the freezer for an additional 30 minutes to harden completely before serving.

Notes

  • Use silicone molds or an ice cube tray for easy removal of the frozen bites.
  • For a lower sugar option, opt for sugar-free or low sugar peanut butter powder brands.
  • If you do not have coconut oil, you can substitute with a neutral oil like vegetable or canola oil for melting the chocolate.
  • Store finished bites in an airtight container in the freezer for up to 2 weeks.
  • Dark chocolate chips with stevia or no added sugar keep this snack lower in sugar.
