Instructions

  1. Brown the beef: In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic together until the beef is fully browned and the onions are softened, about 7-8 minutes. Drain any excess fat if necessary.
  2. Add vegetables and tomato sauce: Stir in the diced bell peppers (or other low-carb veggies) and tomato sauce along with the Italian seasoning. Simmer the mixture on low heat, stirring occasionally, until the sauce thickens, approximately 10-12 minutes.
  3. Prepare casserole dish: Preheat the oven to 375°F (190°C). Spread the beef and vegetable mixture evenly in a greased casserole dish.
