Crust
- 1 1/2 cups almond flour
- 1/4 cup unsalted butter, melted
- 2 tablespoons erythritol or preferred keto sweetener
- 1/2 teaspoon vanilla extract
Caramel Sauce
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/3 cup powdered erythritol
- 1/2 teaspoon vanilla extract
- Pinch of salt
Chocolate Topping
- 1 cup sugar-free dark chocolate chips
- 1 teaspoon coconut oil
- Prepare the crust: In a medium bowl, combine almond flour, melted butter, erythritol, and vanilla extract. Mix well until the mixture resembles wet sand. Press the mixture evenly into the bottom of a lined 8×8 inch baking pan. Place in refrigerator to firm up for about 15 minutes.
- Make the caramel sauce: In a small saucepan over medium heat, combine heavy cream, butter, powdered erythritol, vanilla extract, and salt. Stir continuously until the mixture thickens and turns golden caramel in color, about 8-10 minutes. Allow to cool slightly.
- Assemble the bars: Pour the warm caramel evenly over the chilled crust and spread it out smoothly. Return the pan to the refrigerator and chill for 30 minutes to allow the caramel to set.
- Prepare the chocolate topping: In a microwave-safe bowl, combine sugar-free chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until completely melted and smooth.
- Finish the bars: Pour the melted chocolate over the set caramel layer and spread evenly. Return the pan to the refrigerator and chill for at least 1 hour or until the chocolate hardens completely.
- Serve: Once set, cut into bars and serve chilled. Store leftovers in an airtight container in the refrigerator for up to one week.
Notes
- Use sugar-free sweeteners to keep these bars keto-friendly.
- Ensure caramel sauce cools slightly before pouring over crust to prevent melting.
- Coconut oil helps chocolate topping set with a glossy finish.
- For easier slicing, warm the knife slightly before cutting bars.
