Ingredients

Scale

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar

Wet Ingredients

  • 2 large eggs
  • ½ cup unsalted butter, softened
  • ¼ cup fresh lemon juice (about 2 lemons)

Instructions

  1. Prepare the batter: In a mixing bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Gradually add the flour, mixing until just combined. Finally, stir in the fresh lemon juice to infuse the batter with bright citrus flavor.
  2. Bake the cake: Preheat your oven to 350°F (175°C). Pour the batter into a greased and floured 8-inch cake pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean and the cake is set with a slightly golden top.
  3. Cool and serve: Remove the cake from the oven and allow it to cool completely in the pan on a wire rack. Once cooled, slice and serve. This cake pairs wonderfully with a dusting of powdered sugar or a simple lemon glaze for extra zest.

Notes

  • Use fresh lemon juice for the best flavor; bottled lemon juice may have a muted taste.
  • For a more intense lemon flavor, add some grated lemon zest to the batter along with the juice.
  • If desired, top with a lemon glaze made from powdered sugar and lemon juice once the cake has cooled.
  • Ensure butter is at room temperature for easier mixing and a lighter texture.
  • Allow the cake to cool completely before slicing to prevent crumbling.
