Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar

Wet Ingredients

  • 3 large eggs
  • 1 cup mango purée (fresh or canned)
  • ½ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper to prevent sticking.
  2. Prepare the dry ingredients: In a large bowl, sift together the all-purpose flour, baking powder, and salt to ensure even distribution of leavening agents and remove any lumps.
  3. Mix the wet ingredients: In another bowl, whisk the eggs until frothy, then add the granulated sugar and continue to beat until the mixture is light and creamy. Stir in the mango purée, vegetable oil (or melted butter), and vanilla extract until well combined.
  4. Combine wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture using a spatula or spoon. Mix gently until just combined—do not overmix to keep the cake tender.
  5. Pour batter into pan: Transfer the batter into the prepared cake pan and smooth the surface evenly.
  6. Bake the cake: Place the pan in the preheated oven and bake for 35-40 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs attached.
  7. Cool the cake: Remove the cake from the oven and cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.

Notes

  • Use ripe mangoes for a more intense mango flavor in the purée.
  • You can substitute half of the all-purpose flour with whole wheat flour for a healthier version.
  • Adjust sugar quantity depending on the sweetness of the mangoes.
  • Optional: frost the cake with whipped cream or cream cheese frosting for added decadence.
  • For a more tropical twist, add a tablespoon of lime zest to the batter.
