Pancake Batter

  • 1 cup all-purpose flour

Instructions

  1. Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess fat, then cut or crumble the sausage into small pieces suitable for the mini muffin bites.
  2. Prepare the Pancake Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the buttermilk, egg, and melted butter. Combine the wet and dry ingredients and stir until just blended; some lumps are fine.
  3. Fill the Mini Muffin Pan: Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan. Pour a small amount of pancake batter into each muffin cup, filling about halfway.
  4. Add Sausage Pieces: Place a piece or two of cooked sausage into each muffin cup on top of the batter, then cover with a bit more batter to almost fill the cup.
  5. Bake Until Cooked Through: Bake the mini muffins in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean and the pancakes are golden brown.
  6. Serve with Maple Syrup: Remove the McGriddle Bites from the pan and let them cool slightly. Serve warm with pure maple syrup drizzled over or on the side for dipping.
