Ingredients

Scale

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract, followed by the pumpkin puree. In a separate bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.
  2. Scoop and bake: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for approximately 12-15 minutes until the edges are set and the centers are just firm. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra spice, consider adding a pinch of cinnamon or nutmeg.
  • Ensure your pumpkin puree is pure pumpkin and not pumpkin pie filling for best results.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • You can freeze the cookie dough balls for up to 1 month; bake directly from frozen adding a couple of extra minutes to baking time.
