Instructions

  1. Prepare the Cream: In a mixing bowl, whip the heavy cream with the granulated sugar and vanilla extract until soft peaks form. Gently fold in the mascarpone cheese until smooth and well combined, creating a creamy mascarpone mixture.
  2. Assemble the First Layer: Quickly dip half of the ladyfingers into a light raspberry juice or water (optional) to soften slightly without becoming soggy. Arrange them evenly in the bottom of a serving dish.
  3. Add Raspberries: Scatter 1 cup of fresh raspberries evenly over the ladyfingers layer, spreading them carefully.
  4. Add Mascarpone Cream: Spread half of the mascarpone cream mixture over the raspberry and ladyfinger layer, smoothing the top with a spatula.
  5. Repeat Layers: Repeat the process with the remaining ladyfingers, raspberries, and mascarpone cream, layering the dessert evenly.
