Graham Cracker Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling
- 24 ounces (3 packages) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
Toppings
- 4 ounces semisweet chocolate, chopped or chocolate chips
- 1 cup mini marshmallows
- Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbs are evenly moistened. Press the mixture firmly and evenly into the bottom of a 9-inch springform pan to form the crust.
- Make the cheesecake filling: In a large bowl, beat the cream cheese until smooth and creamy. Gradually add sugar and continue beating until well combined. Add eggs one at a time, blending well after each addition. Stir in vanilla extract.
- Bake the cheesecake: Pour the cheesecake filling over the prepared crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50 to 60 minutes, or until the center is almost set but still slightly jiggly.
- Cool the cheesecake: Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight to allow it to fully set.
- Add toppings and broil: Once chilled, evenly sprinkle chopped chocolate or chocolate chips over the surface of the cheesecake. Next, scatter mini marshmallows on top. Place the cheesecake under the broiler on high for 1 to 2 minutes, watching carefully, until the marshmallows are golden brown and toasted.
- Serve: Remove from the broiler and let the cheesecake sit for a few minutes before slicing. Use a clean, hot knife to cut slices for a smooth finish. Enjoy your classic s’mores cheesecake!
Notes
- You can substitute the graham cracker crust with a chocolate cookie crust for a richer base.
- Be sure to watch the marshmallows closely while broiling to prevent burning.
- For a smoother cheesecake, avoid overmixing the batter once the eggs are added.
- If you prefer a softer toasted marshmallow topping, broil for less time.
- For easier removal, run a warm knife along the edges of the springform pan before releasing.
